A.T. & B. srl was
founded in Cossato (in the Biella province of Italy) when it acquired and
remodeled a historic old bakery, bearing the name of the Bocchietto
Brothers, which had been in business since 1878.
The “conventional” methods of food production were abandoned in favor of
baking exclusively organic products. This was undertaken upon receiving
certification from the Ministry of Forest and Agricultural Resources.
Since 1998 the company’s product line was increased to include crackers,
grissini, various varieties of toast, etc. while maintaining the artisanal
quality in its baked goods.
In 2001 A.T. & B. began to promote product distribution under the name
“Verde & Bio” (“Green & Organic”) throughout Italy in shops specializing in
organic foods.
The company continues to grow and aims to produce an ever greater variety of
both salty and sweet baked goods.
The previous brand name “Bocchietto Brothers” returned to the company’s
product labels in 2006: the same year in which A.T. & B. participated in the
“Salone del Gusto” Food Fair in Torino, presenting a range of traditional
Piedmontese pastries and baked goods that were strictly produced with
organically grown ingredients.
After this, in 2007 the company was honored to receive the label “Eccellenza
Artigiana” (“Artisanal Excellence”) from a special commission of the Region
of Piedmont.

In the words of Oriano Mercante:
“I prefer red wines. Our whole business is born of my personal intolerance to red wines which, while very good, and purchased directly from the farmers who made them, were too elaborate, leaving me feeling sleepless and uncomfortable.
“For this reason, several years before acquiring our own vineyard, I was already buying Rosso Conero grapes and making wines for myself, my friends, and my family. Until 2003 we used our own wine-press, an old family possession which is now defunct and on display in our winery.
“In 1999, the vineyards adjacent to our home went on the market, and with them, the rights to produce Rosso Conero DOC. The old farmer selling his land assured us that the vines, planted as many as 20 years before, produced excellent grapes.
“We jumped at the chance to buy this land, and have now been working at full capacity since 2004. Our philosophy is unchanged: we want the least possible interference in our wine-production, to preserve the natural characteristics of the wine. We obtained organic certification in 2003.
“Today we produce Rosso Conero DOC and Organic Conero DOCG for ourselves and for everyone else who enjoys it. Our wines are natural, full-bodied and beautifully colored. See for yourselves!”

VINEGARof Rosso Conero DOC red wineMade from Organic Grapes A unique vinegar “100% Marchigiano”!
We grow the Montepulciano grapes for this wine in the province of Ancona, in an area called Finestre Rosse (“red windows”) di Camerano. The grapes are optimally exposed so as to receive sunlight until sunset. We practice organic cultivation methods, and are rewarded with grapes of rare vigor and beauty. Some of the wine we produce goes into this wonderful vinegar, which is activated by a mother-of-vinegar that’s over 50 years old, according to the traditional vinegar-making method of this region. The vinegar is aged slowly, by natural means, in steel containers for at least six months. We use no artificial colorings, preservatives, or acetic acid.
ORGANOLEPTIC CHARACTERISTICS:
COLOR: Reddish-purple, full and shining. BOUQUET: Intense, persistent, pleasantly acidic. FLAVOR: Intense, dry; just a few drops are sufficient to flavour any food.
FOOD PAIRINGS:
Can be used as additional flavouring in pasta sauces, as well as with cooked or raw vegetables.
